Does Windows keep history of copied files?

Windows 10 users relish using the Clipboard History feature that allows the Clipboard to hold various files that you can paste at any time using a simple keystroke combination. However, the feature is off by default, and you need to turn it on before using it.

Can my employer see if I copy files?

Unless your USB drive has a specialized journaling layer like a journaling file system, that can store the last accessed information or specifically 'last-copied' information, you can't tell if someone copied anything.
